Keep Screen
On the keep screen you can choose specific things you don't want deleted. So you can choose which sites you want to keep in your history, specific cookies that you want to keep. Anything you add in here won't be touched at all by Privacy Shield.

Secure Deletion Screen
Secure deletion makes it possible to get rid of files so not even a Government undelete program can recover them. So if you have any files, such as images or videos, that you don't want found, simply select the files, and run a “cleaning”. When run with the maximum level of security, the portion of your hard disk where the files are located is overwritten hundreds of times, making the files impossible to recover.
